Lockdown Diaries:

Lockdown has me bored, so I’ve been using the time to find the joy and calm in baking and cooking like I used to. I realised that before this, we did the things, but because we were so swamped with life and it’s responsibilities, we failed to see that we were losing the simple joys in even hobbies.. Now, when I cook, and bake, and read, and journal, it’s with a calm and pleasure like I haven’t felt in too long a time.

Easy sponge:

4 eggs

1 cup sugar

1 tsp vanilla essence

Beat until fluffy an light yellow in colour.

1/2 cup oil

1/2 cup boiling water

Beat together a little.

1 1/4 cup flour

1 tblsp baking powder

Pinch of salt

Mix together.

Add the flour an water mixture alternatively to the egg mixture.

Lightly beat until incorporated.

Bake @ 180.

For cupcakes bake for 10-15 min. For normal cakes 30 mins or more.
